Spaghetti with chilli, sardines and oregano

An excellent variation on spaghetti with canned fish! For improved original you will need to make two changes: half the breadcrumbs (75g is way too much) and save pasta water, otherwise you will end up in prison, because the dish will be so dry. Rocket is a noice addition.

I felt the portions are more a primo; my guest disagreed and said it was really filling. We ended up eating some shit curries that evening. Stuttgart’s Indian restaurants really are weak.

This pasta, on the contrary, is warmly recommended. If you are looking for something more simple, check pasta with broccoli and garlic.

Ingredients

- 200g dried spaghetti
- 50g rocket leaves, to mix in at the end
- DON'T FORGET to save the pasta water, at least a ladle, to add at the end

Breadcrumbs topping
- olive oil
- 1 garlic clove, chopped for breadcrumbs
- 35g rough breadcrumbs, made from stale bread or simply (panko) breadcrumbs

Sauce 
- 1 garlic clove, chopped for breadcrumbs
- 1 red chilli, deseeded and chopped
- 1 tin of sardines (120g, ideally in olive oil)
- 5 oregano sprigs or 1/2 tsp dried oregano
- add a couple of tbsp of pasta water

My comments to the method:
- if you have a sautese, use it for making the sauce
- combine sauce and pasta in the pasta pot
- adding pasta water is crucial
