Stir-fried noodles with tofu or protein

I like the sweet and spicy sauce in this one – ingredients list can sound a bit overwhelming, so only do it if you plan to use things again (eg. make a curry from tikka masala paste). You can also skip an ingredient or two; I feel thicker noodles work better.

Replace tofu with thinly sliced chicken breast or prawn. If you have time you can marinate tofu in soya sauce. Prick holes in tofu with a toothpick, cut in cubes and then marinate in 2-3 tbsp of soya sauce for 20-30 min. Works best in a small container that you can shake occasionally.
