This is an easy one, but be careful with the lemon juice. The recipe calls for juice from one lemon; only a half was more than enough. You also do not need 1l of stock for 180g of rice, more like 600 ml.
I liked the addition of thyme. If you use parmesan, this won’t really be vegetarian anymore.
