Excellent and versatile beetroot hummus

This take on hummus is terrific and goes great with toasted pita bread (cut the bread in quarters and fry in olive oil until slightly golden on both sides).

Sprinkle with Za’atar which you can either make (eg. with marjoram/oregano + sesame and cumin seeds, sumac) or buy. Goes great with Turkish köfte, or meatballs.

Ingredients

- 1 tbsp cumin seeds, toasted and grounded in a mortar
- 250g of cooked chickpeas
- 250g of cooked beetroot (chopped)
- 1tbsp tahini paste
- 1 garlic clove, peeled and crushed
- juice of 1 lemon (to taste!)
- 1-2 tbsp of olive oil (to taste!)
- salt and ground pepper
Method

- chickpeas, beetroot, tahini and garlic and grounded cumin in food processor
- run the processor until smooth
- start adding lemon juice and olive oil and grind again (to taste)
- adjust the seasoning (salt, pepper, oil and lemon juice)
