This take on hummus is terrific and goes great with toasted pita bread (cut the bread in quarters and fry in olive oil until slightly golden on both sides).
Ingredients - 1 tbsp cumin seeds, toasted and grounded in a mortar - 250g of cooked chickpeas - 250g of cooked beetroot (chopped) - 1tbsp tahini paste - 1 garlic clove, peeled and crushed - juice of 1 lemon (to taste!) - 1-2 tbsp of olive oil (to taste!) - salt and ground pepper
Method - chickpeas, beetroot, tahini and garlic and grounded cumin in food processor - run the processor until smooth - start adding lemon juice and olive oil and grind again (to taste) - adjust the seasoning (salt, pepper, oil and lemon juice)
