A great summer starter and an easy soup that you can also make with frozen peas (400g). It works well as a refreshing cold soup for late spring or summer or as reminder of warmer days in the winter.
The recipe itself is a weird mix of general (bunch of spring onions, medium potato) and precise (850ml of stock), so I suggest to trust your feeling.
The version on the photo was maybe a bit heavy on the stock and I did a terrible job with the buttermilk topping.
