Flatbreads with lemon thyme ricotta

Are flatbreads a simple pizza? Maybe. These are good, I especially like the topping: ricotta with lemon zest. We threw over some toasted pistachios. For extra points cut the flatbreads in perfect circles with a smaller plate/pot lid.

Another interesting bread is this Tibetan inspired by Jacques Pepin.


- 1 leek, trimmed, cut in half-moons
- butter
- olive oil (couple of tbsp)
- 250g flour (I sometimes mix it up with Dinkelmehl 50-50)
- salted water (100-150ml)
